4Excellent Combo Grill at a Great Price

I absolutely love this grill. I researched it extensively before purchase, and read many rather interesting reviews. This is not one of those big heavy one quarter inch thick steel grills that will last 30 years. But if you take care of it and keep it covered, you will get many good years of use out of this thing.Here's what I like: - Flexibility - charcoal, gas or wood. (And wood can be direct, for steaks, or indirect, for smoking.) - Capacity - while I rarely need to cook this much meat, it's nice to be able to cook on multiple different grills at the same time. - The flat top - I like to keep my coat meets warm in a chafing dish. You can set the water pan/chafer on any one of these tops, and keep it hot for hours, without worrying about overcooking, or running out of sterno. - Heats up Fast - my old heavy New Braunfels Smoker usually required about one hour to get the fire, smoke a temperature just right. This one seems to take only about 20 minutes. - Big shelf underneath. I don't think I've ever had a grill that had a space underneath that was usable. (It was always taken up by the propane tank in some sort of slanted heatshield.) This one has tons of room for my accessories. - The cover - huge, high quality, and hangs all the way down to within a couple of inches of the ground. I can leave my matches and a roll of paper towels on the rack below, and they never get wet, even in the rain.Here's what I don't like: - this is not a super heavy-duty grill, so it's not going to last forever. I am certain that within a few years, rust will get the better of it, starting with the wood box. - this is probably just a weird manufacturing error. But the $75 cover, which fits absolutely perfectly, inexplicably has the beautiful Smokey Hollow logo silkscreened on the BACK instead of the front. I just have to laugh whenever I look at it. Surely, someone made a mistake somewhere...

2Universal means sacrificing quality

Creating a universal product inevitably means something falls apart. In the case of this grill, that is literal. I purchased this grill knowing it was cheap, but liking the idea of quickly transitioning between barbecue and grill, and honing my minimal skills on a barbecue. If you have this same thought, this would be a good purchase for you. It's easy to put together, the customer service was good (a piece was missing, 5 x minutes on the phone and 1 x week of waiting for USPS and I had the piece and extras), and relatively inexpensive. Again, great for having an all in one if you want to switch between multiple types with less deck space taken.The Bad:-Extraordinarily cheap quality. Cheap, thin metal; easily oxidized; numerous holes which release heat; cheap welds holding the item together.-Does not retain heat. The cover is essentially 1/8" thick (if that) aluminum meaning a constant maximum heat setting (and drying of food) is necessary.-Extremely hot surface: I couldn't grill with my kids outside. The surface (again, due to thin material and required constant heat) gets very warm throughout the grilling time period. Not fun. Although if you grill during the winter it's nice to stand by the grill and get warm...-Elemental damage: admittedly, I did not take care of this grill by utilizing a cover near as much as I should. I've had the grill for 15 x months, with total cover time approximately 13 months (summer I didn't put the cover on at all). The problem lie in rusting: everywhere quickly. Within one day it rusted in the rain, incurring an additional maintenance requirement. During the winter months, if not used during a month time period, taking off the cover and rubbing off the rust (steel wool, etc) is required. You can use some kind of oil, but because the metal is so thin, the heat temperatures melt it quickly (causing a horrid grilling experience).-Drip pans: fill with water. It seems as if there is a funnel at the top of the grill which catches all the water in the grease trap. Emptying a full capacity grease tray prior to cooking is an extraordinarily bad experience. Wet, nasty grease on your deck and pants is not a good way to start a night of grilling.-Internal components: 15 months into the purchase and the grill components are rusted to the point I can no longer utilize the grill. I am meticulous cleaning inside, so I'm not sure what I could have done differently here. Bottom line: the internal components which hold the heat shields and grills in place are very weak pieces of sheet metal and the entire right side holders have rusted and fallen off (into the grease pan...joy). I now have only the left side of the grill from which to cook, and I must take caution when cleaning the rack to ensure I don't collapse this side (which are also rusted). I calculate another month before this side collapses.If you want to experiment with multiple types of grill/barbecue/smoker, this is your item. However, understand it has a shelf life, and you'll have to modify your cooking to ensure maximum heat output at all times (which makes the barbecue and smoker nearly useless if you like slow roasted items).

5A BBQ Monster

This is the only outdoor cooking system a serious cook needs. Sears, grills, BBQs (coal) and smokes - all in one unit. It is big, but it is meaty. The only chanllenge I have (I cook semi-pro, which means I private chef and cater as a side business)is placement in the back yard. Solid cast iron grates. Grill heats up well. Searing helps in the grilling side (rather than superheating a cast iron grill plate).Issues I have had are that I have busted the knobs on the grill side and had to replace with generics from Lowes (could be a heat thing). The plastic parts are a bit weak, but given the work I have done on this piece of equipment (sometimes several times a week), have to expect it. Also, the uppper cooking racks drop down low when the lid is closed, so if you are cooking a bird like turkey or even a couple of whole chickens, you have to take the rack out.Given that the smoke box is next to the BBQ (coal) side, the only issue I have is that I cannot cold smoke. Even just using the smoke box, the temp in the cooking side will get to 200 - not the best for smoking cheese :-OOtherwise, when this one wears out, I will get another one (or build one based upon this style).
